Easy Bread Recipe
A simple loaf to make as we move into harvest season.
I am not a bread maker. I have tried many times, but it always seems to go wrong, or takes far more time than I have.
Then a close friend showed me this incredibly simple method.
And it worked. I baked bread!
There is no kneading and very little to do. The dough is quite wet, so don’t worry if it doesn’t look like a traditional bread dough.
You will need
500ml lukewarm water, around body temperature
1 tablespoon honey
1 tablespoon dried yeast
1 tablespoon salt
500g spelt or white flour
Butter, for greasing
A handful of seeds
Method
Pour the lukewarm water into a jug and add the honey, yeast and salt. Give it a little whisk and leave for a few minutes for the yeast to activate.
Generously butter a loaf tin or baking dish, then sprinkle some seeds over the bottom and sides.
Put the flour into a large bowl.
Pour in the yeast mixture and mix everything together. The dough should be quite wet. If it feels too dry, add a little more water.
Cover the bowl and leave for around 30 minutes, until the dough has risen and looks noticeably bigger.
Preheat the oven to 180°C.
Pour the dough into your prepared tin and sprinkle a few more seeds over the top.
Bake for around 35 minutes, or until cooked through. I simply poke a skewer into the middle. If it comes out dry, it’s ready.
Remove the bread from the oven, carefully take it out of the tin and place it on a baking tray to cool completely.
The other lovely thing about this bread is that it keeps well for several days.
